A professional rangetop is mostly serviceable parts, so age on its own is rarely the reason to give up on one. A cracked manifold or a gas leak upstream of the appliance is a different conversation, and that is a job for the utility first.

- Air shutters choked with lint and dust, which is why the flames stand orange and lazy where they should be tight and blue.
- A burner head that is no longer seated square on its orifice after a clean, so it lights with a thump rather than quietly.
