02 Diagnosis
What it usually turns out to be
A professional rangetop is mostly serviceable parts, so age on its own is rarely the reason to give up on one. A cracked manifold or a gas leak upstream of the appliance is a different conversation, and that is a job for the utility first.
- A spark electrode that took a boil-over. It keeps sparking because it is reading its own contamination instead of a flame — clean and reseat, and often that is the whole job.
- Valve stems gummed with cooking grease, which is what stiff knobs almost always are. The valves come out, get cleaned and regreased, and go back.
- A spark module that has weakened, so burners light on a dry day and refuse on a damp one. Common on the coast side and easy to prove with a meter.
- Air shutters choked with lint and dust, which is why the flames look orange and lazy rather than blue.
